A: Spring is the beginning for fresh cheeses – their hallmark is creamy texture and subtle flavor. Lots of cheeses have seasons just like fruits and vegetables. Spring is especially good for fresh sheep or goat milk cheeses because that’s when they start producing the first milk of the season.
