40 years of McCaffrey’s

McCaffrey’s market opened its doors 40 years ago in Yardley, PA. Since their first store in 1986, McCaffrey’s has grown to offer their exceptional foods and services in 8 locations: Princeton, West Windsor, Newtown, Doylestown, Blue Bell, New Hope and Gladwyne. I thought it would be fun to think about some foods trends that were popular back in the 80’s and have stood up the test of time.

Ranch Dressing: Ranch dressing was invented at Hidden Vallery Ranch in the early 1950s. The first bottled shelf-stable version appeared in 1983, and in 1986 Cool Ranch Doritos were launched. By 1992, Hidden Valley Ranch was a best-selling salad dressing in the United States, surpassing even Italian dressing. Its creamy texture and herbaceous flavor made ranch dressing a household staple that transformed salads, veggies, and snacks.

  • Try McCaffrey’s homemade ranch dressing. This creamy, tangy and flavorful dressing is made with fresh herbs and spices. Using Greek yogurt instead of mayonnaise, this light version of ranch dressing is perfect for salads, vegetables, or a dip. It’s quick to make and great for everyday meals.
  • Enjoy ranch dressing with this yummy Buffalo Roasted Cauliflower recipe. Cauliflower never tasted so good in this easy appetizer that everyone will love.
  • Or liven up these delicious Baked Zucchini Sticks with a bit of ranch dressing. Panko breadcrumbs give zucchini a nice crunch without frying.

Taco Salads: While Taco salads gained popularity in the 1960s, the salad became a staple in restaurants and kitchens after Taco Bell introduced its crunchy tortilla-shelled version in 1984. Taco Salad, a true fiesta of flavors, offered a twist on traditional Mexican fare with its layers of seasoned meat, cheese, and crunchy tortilla chips. It was a versatile dish that could be customized to suit any taste, making it a favorite any day of the week.

  • This Homemade Taco Seasoning is a quick, healthy alternative to store-bought packets. It is completely salt-free, using spices like cumin and chili powder to add bold flavor. Mix it up in five minutes and use it to season beef, chicken, or vegetables. It adds great taste without all the extra sodium.
  • These Taco Bowls are a fresh and healthy way to enjoy your favorite Mexican flavors. Made with seasoned ground chicken, fresh veggies, rice, and beans, the bowl is topped with a creamy Salsa Verde. This dish is also very easy to prep in advance for a quick meal.
  • If you enjoy beans and rice, you will fall in love with this delicious Black Bean Quinoa Salad. Spiced up with Mexican flavors, this flavorful side dish is also a great vegetarian taco filling.
  • Keeping with the taco theme, this healthy Taco Casserole is easy to make and full of delicious flavors. Layers of lean ground chicken, beans, and veggies make it hearty and satisfying. This is also great for a healthy appetizer!

Pasta Salad: Macaroni salad may have been a staple in the 60’s and 70’s but the “pasta salad” boom exploded in the 1980’s when chefs started experimenting with rotini, penne, vinaigrettes, and fresh herbs. Pasta salad was elevated from a simple side to a trendy culinary item. Today, pasta salad remains popular due to its versatility and “make-ahead” nature. Modern adaptations focus on health-conscious ingredients like whole grains and fresh produce. Pasta salad has also seen a resurgence on social media platforms like TikTok, where “viral” recipes continue to keep the dish trend.

  • This Healthy Macaroni Salad is packed with flavor from roasted red peppers, pickles, and olives. Made with chickpea pasta and Greek yogurt, it’s light, creamy, and great for picnics or a healthy side for meal prep. Chill it overnight to let the flavors blend and enjoy a classic side dish all summer long.
  • Combining two trends from the 80’s, this healthy Taco Pasta Salad is a fun mix of pasta, fresh veggies, and beans with a tasty lime dressing. It’s packed with flavor, easy to make, and great for lunch or dinner. The mix of crunchy peppers, creamy avocado, and zesty seasoning makes every bite delicious!
  • This delicious Veggie Pasta Salad with garden vegetables will never disappoint. Enjoy as a  healthy side dish or light entree. Whole grain pasta salad is a tasty alternative to a traditional  potato salad loaded with mayonnaise.
  • For a quick meal, enjoy this Tortellini Pasta Salad. Cheese tortellini in a creamy sauce plus your favorite veggies. What could be better? This tortellini and vegetables recipe will become a favorite.

That was a fun trip down memory lane for those of us who remember when McCaffrey’s first opened their doors in 1986!
