Hand-Picked Tips

Just like tulips, daffodils, and lilies, fiddlehead ferns are a sign of spring! Fiddleheads refer to the young, tightly coiled fronds of certain fern species which are harvested and eaten as a spring vegetable. They are rich in antioxidants, vitamins, and minerals. Cook them like you would asparagus – wash well in cold water and boil or steam for 12-15 minutes, until tender crisp. Foodies say they are sweet like asparagus and snappy like a green bean, with a touch of broccoli stem. Others describe fiddleheads as a cross between asparagus, baby spinach, and artichoke. They have a grassy, springy flavor with a touch of nuttiness. You be the judge! Try this recipe for Creamy Asparagus Soup, swapping in well cleaned and finely chopped fiddleheads for the asparagus!
